Use your simmering oven to prepare the mash. You can easily do this in advance and freeze it. Defrost Christmas Eve and then heat thoroughly on the big day! Serves 8
- 2 lb (900g) sweet potatoes
- 2 root celeriac
- 1 swede
- 12 oz (400g) Boursin garlic cream cheese
Set the Boursin on the back of the Aga range cooker to soften.
Peel the sweet potatoes, swede and celeriac and cut into even sized pieces. Bring to the boil on the boiling plate, drain, cover and put into the simmering oven for 35 – 40 minutes until soft. Drain again.
Mash, then add cheese. Beat with a wooden spoon until smooth and serve.
