Use your roasting oven to prepare the stuffing. You can easily do this in advance and freeze it. Defrost Christmas Eve and then heat thoroughly on the big day! Serves 6 – 8
- 1 lb (450g) sausage meat
- 7 oz (200g) prepared chestnuts
- 1 onion
- 1 tbsp olive oil
- Salt and pepper
- 1 tbsp chopped parsley
- 1 tbsp chopped fresh tarragon or marjoram
Peel and chop the onion. Heat the oil and add the chopped onion. Cook for a minute until sizzling, then cover and transfer to the simmering oven for 15 minutes until softened.
Tip the sausage meat, chestnuts, onions, seasoning and herbs into a processor and whizz until mixed. Either stuff into the neck cavity of the turkey, turn out into a greased ovenproof dish or roll into balls, and bake for 25 minutes.
