Use your roasting oven to prepare these glazed carrots. Prepare in advance and freeze if you wish! Serves 4.
- 1 lb (450g) carrots
- 2 oz (55g) butter
- 1 tsp runny honey
- Grated rind of an orange
- Salt and pepper
- 1 tbsp chopped parsley
Cut the carrots into even sized pieces and put into a pan of cold water.
Cover, bring to the boil, drain then put, covered, into the simmering oven for 15-25 minutes until tender.
Return the pan to the simmering plate and add the butter, honey, orange and seasoning. Shake until completely coated and shiny. Sprinkle on the parsley and serve.
