By all means prepare bread sauce in advance and freeze. Defrost Christmas Eve and reheat for an hour, covered, in the simmering oven. Serves 6 – 8
Peel the onion and chop it. Put it into a pan with the cloves, bay leaf, mace, seasoning and milk and slowly bring to the boil. Cover and put into the simmering oven for half an hour.
Whizz the bread to crumbs in a processor.
Strain the onion and flavourings from the milk, then stir in the breadcrumbs and allow to stand for 5 minutes for the bread to soak into the milk.
Stir in the butter and serve.
