Crispy Roast Potatoes


Recipe Name:  Crispy Roast Potatoes Recipe with Instructions for Aga Range Cookers

A roast dinner, Christmas or otherwise, isn’t complete without the humble, delicious and crispy roast potato.

You'll need...


  • 1 lb (450g) King Edward potatoes
  • 1 oz (25g) goose fat, dripping or 1tbsp sunflower oil
  • 1 tbsp plain flour, or a mixture of polenta, ground rice, seasonings and herbs
  • Method:

    1. If you're using the dripping or goose fat, set in a bowl on the back of the Aga to melt.

    2. Line the small shallow roasting tin with non-stick liners. 

    3. Cut the potatoes into even sized pieces. Put them into a pan of cold water. Cover and bring them to the boil, and then simmer for a minute. 

    4. Drain the potatoes and then add the flour or polenta mixture. Shake well, then pour in the fat and shake again. 

    5. Tip the coated potatoes into the tin and hang them from the second set of runners and cook for about an hour, or until crisp and golden. 

    Aga Range Cooker Tips:

    • Use the roasting oven in your Aga range cooker, or 200C, 400F or Gas mark 6. 
    • You can prepare them ahead of time and reheat them on the 2nd runners for 10 minutes. 
    • You can freeze the roast potatoes. To reheat from frozen, pop them on the 2nd runners for 25 minutes.
