Description:
A homemade sausage roll is hard to resist and they don’t seem to last long in my household! I’ve given these a Christmassy twist with sage and chestnuts. Worth having a packet of ready-made puff pastry in the freezer for whenever the mood strikes!

In a large bowl, mix together the sausage meat, chestnuts, sage and onion marmalade. This is easiest to do with your hands, if a little messy! If the sausage meat is unseasoned, season generously with salt and pepper.

Lay the sheet of puff pastry on a lightly floured worktop of chopping board and cut in half lengthways to make two long strips.

Divide the filling evenly between the two strips by making a long sausage down the centre of each piece of pastry. Brush the edges of the pastry with a little beaten egg and pull/roll round the filling, pressing the pastry together to seal.

You should now have two long sausage rolls. Turn them over so that the seam is underneath the roll and cut each roll into 7 or 8 smaller pieces. For a neater finish, chill the large rolls before slicing. Place on a large baking sheet, lined with a silicone baking sheet or greaseproof paper.

Brush the tops of the sausage rolls with beaten egg and sprinkle with sesame seeds, if desired.

Slide onto the 3rd runners in the roasting oven and bake for 20 minutes until golden brown and piping hot.
Aga range cooker tips:
- If your roasting oven is particularly hot and the sausage rolls are browning too quickly, slide the cold plain shelf above to allow them to cook through without burning.
- You can use a pack of favourite sausages instead of sausage meat – simply squeeze the meat from the skins.
- To check the filling for seasoning, simply fry a tiny piece before using. Taste and adjust seasoning as required.
- The sausage rolls freeze well before baking.
