Gooseberry crumble

Gooseberries have a short season – make the most of them with this delicious. The combination of gooseberry and elderflower is really good but if you don’t like the flavour of elderflower, just leave it out.

I’ve stuck to a fairly simple crumble topping here but feel free to add some finely chopped almonds if you prefer a little extra crunch.

You'll need...


  • 700g gooseberries
  • 100g caster sugar
  • 3 tbsp. elderflower cordial
  • 200g plain flour
  • 100g cold butter, cut into 1cm cubes
  • 50g demerara sugar
  • 25g oats
  • Equipment...

    • 3 litre pie or baking dish


    1. Top and tail the gooseberries – you can either do this with a sharp knife, scissors or simply pinch off the stalk and flower ends with your fingers.

    2. Place the gooseberries in a large baking dish and sprinkle with the caster sugar and elderflower cordial. Give the dish a good shake or stir to ensure the sugar and elderflower cordial are evenly coated.

    3. Next, make your crumble: rub the flour into the butter using the tips of your fingers until the mixture resembles coarse breadcrumbs. Stir in the demerara sugar and oats.

    4. Sprinkle the crumble mixture onto the fruit, ensuring the gooseberries are completely covered.

    5. In a 3 or 4 oven Aga range cooker – bake in the middle of baking oven for 35-40 minutes until golden on top and the fruit bubbling beneath. In a 2 oven Aga range cooker – bake on a grid shelf on the bottom runners of the roasting oven for 20 minutes, until golden brown, then transfer to the centre of the simmering oven for a further 25 minutes.

    Aga range cooker tips:

    • If you have a 2-oven Aga range cooker, use both ovens to ensure a perfectly cooked crumble. Use the hot roasting oven first to brown the crumble topping and then finish by cooking gently in the simmering oven.
    • Use this method for other fruit crumbles – if you are using a firmer fruit, such as apples, you will need to cook for longer in the simmering oven – approximately 40 minutes.
    • Whilst the crumble will be ready after 25 minutes in the simmering oven, it can happily wait there for longer until you are ready to eat. This is particularly handy if you are cooking a full Sunday roast as it frees up space in the roasting oven for all the trimmings!
