Miso Aubergines

Servings: 2 - 3 Aubergines

Make this delicious sweet/salty miso-based glaze for aubergines - enjoy the aubergines on their own for a light meal, or serve as part of a stir-fry for a more substantial meal.


Miso glaze (enough for 2-3 aubergines)

  • 1 clove crushed garlic
  • ½ inch piece of ginger, finely grated
  • 1 tbsp. white miso paste
  • 2 tbsp. soy sauce (not dark)
  • 1 tbsp. sesame oil
  • 2 tbsp. mirin
  • 1 ½ tbsp. runny honey
  • Combine ingredients in a jug and small bowl, whisk with a fork to combine.

    For the miso aubergines:

  • 2 aubergines (or one per person)
  • Miso glaze (as above)
  • To serve:

  • Finely sliced spring onions
  • Sliced red chilli
  • Freshly chopped coriander
  • Method:

    1.  Cut the aubergines in half lengthways. Score the flesh in a diamond pattern by cutting diagonally in one direction and then the other.

    2. Place the aubergine halves cut side up on a baking sheet lined with a silicone sheet, or greaseproof paper. Brush liberally with the miso glaze, reserving a little for basting. Slide tray onto the second runners and bake for 30-40 minutes, basting occasionally with the remaining glaze, until soft and caramelised.

    3. Garnish with sliced spring onions, red chilli slices and coriander.


    Aga range cooker tips and notes:

    The roasting oven is hottest at the back, towards the middle. You may find the aubergines at the back brown faster than those at the front. Rotate the tray half way through cooking to ensure they are evenly bronzed.
