Potato salad with mustard and radish

Description: 

Cooking root vegetables in the simmering oven saves having the hotplate lids open for too long. It also means that you don’t need to stand nearby keeping eye on the pan – you can head outside and enjoy the sunshine! It takes a slight leap of faith to discard ALL of the water when moving your pan to the simmering oven but be brave and give it a go! Combining mayonnaise with yoghurt makes this potato salad a little lighter than some. Use vegan mayo and coconut yoghurt for a light vegan version.

You'll need...

Ingredients:

  • 500g new potatoes
  • 5 radishes, thinly sliced
  • 4 spring onions, thinly sliced
  • 2 tbsp. mayonnaise
  • 3 tbsp. plain natural yoghurt/Greek yoghurt
  • 1 tsp. Dijon mustard
  • 1 tbsp. freshly chopped chives
  • Method:

    1. Wash the potatoes and halve if particularly large. Place in an ovenproof saucepan and cover with cold water. Bring to the boil on the boiling plate and simmer for 4 minutes. Drain all the water, cover with lid and place on the floor of the simmering oven for approximately 25 minutes (or until the potatoes are tender).

    2. Whilst the potatoes are cooking, make the dressing. Whisk together the mayonnaise, yoghurt, mustard and most of the chives and season with salt and pepper. Tip the potatoes into a large bowl and leave to cool for a few minutes. Whilst still warm, add the radishes and spring onions and pour over the dressing. Sprinkle with the remaining chives.

    Aga range cooker tips:

    • It is surprisingly easy to forget that the handle of a saucepan that has been in the simmering oven will be very hot (most owners have the scars to prove it!). Pans with removable handles are ideal for transferring from hotplates to ovens but if not, be sure to use a good quality oven glove or gauntlet.
    • All root vegetables can be cooked in the same way as potatoes – carrots, parsnips, celeriac. Unlike boiling on the top, it won’t matter if your vegetables remain in the simmering oven a little longer than planned.
