Description:
Get tender roast beef with minimal fuss. Mouthwatering right out of the oven, superb warmed back up the next day and great cold in a sandwich with a dash of horseradish.

Wipe the joint with kitchen paper to dry.

Rub mustard into the joint.

Line your roasting tin with your non-stick liner and put the meat in.
Aga Range Cooker Tips:
- For Fast Roasting - Hang the tin from the third set of runners in the roasting oven and cook. 12 minutes per lb of beef.

For Medium Roasting - Put the meat into the roasting oven for one third of the cooking time, to allow the joint to seal and brown.
- Move the joint to the simmering oven, for the entire minutes per pound cooking time. 12 minutes per lb of beef.
- When cooked, remove the meat and allow it to rest for at least 10 minutes to allow the juices to settle, whilst you make your gravy.
