Sweet & Sour Red Cabbage

Description:

Put a little zing into your roast dinner with this mouth wateringly moreish side dish. It’s not just for Christmas you know!

You'll need...

Ingredients:

  • A good glug of olive oil
  • 1 tsp. sesame oil 
  • 2 red onions, finely sliced
  • 1 red cabbage, cored and shredded 
  • 50g barberries (or cranberries)
  • 1 tbsp. light brown soft sugar
  • 3 tbsp. cider vinegar
  • Juice & zest of an orange 
  • 50ml water 
  • 1 tsp. ground cardamom
  • 1 tsp. ground coriander
  • 1 tsp. ground nutmeg
  • 1 tsp. dried dill
  • Season to taste but go heavy on the pepper
  • Method:

    1. Pop the oil in a big pot and sweat down the onions in the simmering oven until they start to colour.

    2. Add all the other ingredients, bring to the boil then put the lid on, place in the simmering oven and allow to bubble away for 20-30 minutes. 

    3. Remove from the Aga and if it’s still liquidy, finish on the hob top without the lid until rich and sticky.

    Aga Range Cooker Tips:

    • Cook in the simmering oven for 20 to 30 minutes. . 
    • Prepare in advance, and keep warm for an hour before serving.
