Sue has a very handsome Rayburn range cooker, here is her tip - "I usually have my Rayburn range cooker on mark 2 for this, it is best to try one first to get the position on the hotplate correct! Enjoy!"
Sue doesn't use a simmering liner, but you could try one if you have an Aga range cooker!
Ingredients:
- 350g Self raising flour
- 2 Level tsp of baking powder
- 175g Of butter
- 115g Caster sugar
- 100g Sultanas or currants
- ¾ Tsp mixed spice
- 1 Large egg
- About 2 tbsp milk
- Caster sugar for sprinkling
You may need...
- A mixing bowl / food processor
- A wire rack
- A simmering spot liner
Method:

Measure the flour and baking powder into a large bowl

Rub in the butter

Add the spice, sugar and fruit

Beat the egg and milk together

Add to the mixture to make a firm dough

Roll out the dough to 5mm thick and cut out with a 7.5mm plain round cutter

Lightly grease the hotplate with a little bit of butter

Cook on the coolest part of the hotplate, it should take 3 mins each side

Cool and sprinkle with sugar
