Vegan Shepherd's Pie - the first 'community tip' received in our search to find Vegetable festive treats!

Mary responded to our request for veg based festive dishes. Her tip hit the spot and got our tummies a'gurgling on what feels like the coldest day so far and the start to the winter season!

Her dish reminds me a bit of a chunky soup that I make for my vegetarian 10 year old, so I have added my thoughts too! Please let Mary and I know how you get on! 

 

Mary uses whatever veg she has to hand, so It is great for using the ends of celery or last couple of carrots from the bag before the weekly shop is due…

 

Last time that Mary made it, it was a tasty success with onion, celery, carrot, swede, sprouts, broccoli, & cauliflower! YUM.

 

Rinsed green lentils, seasoning, vegan stock, bay leaves and herbs of choice are added to the prepped veg. Bring to the boil and then leave to cook in the oven. I add a spoon of marmite to my son’s vegetarian meals for a savoury edge and a little cornflour to thicken.

 

Top with mashed potato, use a 'creamy' potato - Desiree, Yukon, or Maris are believed to be best, and obviously vegan butter or olive oil. Mash over a gentle heat to get the best result!

After studying ‘drawing stuff’ at university in Bath, Katy spent 10 years selling wares and managing folk at Habitat in Bath.
