Cooking pastry in your range cooker? No need to blind bake! Put the raw pastry into a dish, add the filling and put onto the floor of the roasting oven to bake.
Use a ceramic stoneware or pyrex dish. Metal dishes conduct heat too quickly and the pastry browns before the filling is cooked. Ceramic stoneware or pyrex doesn’t conduct the heat as quickly, so it all cooks at the same speed.
