"My husbands favourite Monday night supper, leftover veg from the Sunday roast, chopped fairly finely, I throw in a little bit of mature cheddar, push firmly into the bottom of a springform cake tin and put on the floor of the roasting oven to crisp the underneath, then move it up to crisp the top, serve with cold meat (also from the Sunday roast) and pickle......happy husband!"

'After The Roast' Bubble & Squeak Patties - Perfect for Boxing Day
Take your leftover veg, with a larger proportion of potato. Crush the spuds with a fork and blend together with your leftover greens and other root veg (chopped into small pieces).
Add one beaten egg, a few breadcrumbs if you have leftover from stuffing making, Fresh herbs, a bit of mustard and even a bit of cheese from the cheeseboard. Shape into patties and chill for a bit.
Then fry off until brown, or pop in the roasting oven on a tray and turn to brown. Serve with a poached egg and a cuppa! (or hair of the dog)
