Baked Oats

This is a delicious and hearty way to start the day! Like a cuddle in a bowl, it warms your families tummies & fuels them for the day! 

"When I served it to my children, they thought they were being allowed cake for breakfast and were thrilled! It re-heats well so makes sense to make a large batch to enjoy throughout the week, however the recipe is easily halved if you are only serving a few. You can vary the fruit and spices – I’ve offered a few suggestions below." Antonia

Ingredients:

  • 2 small eating apples
  • 2 eggs
  • ½ cup sultanas
  • 1 tsp cinnamon
  • A pinch of salt
  • 2 cups rolled oats
  • 2 cups milk
  • 2 tbsp maple syrup
  • You May Need....

    • 3 Litre pie or baking dish
    • Mixing bowl
    • Jug

    Method:

    1. Peel and chop (or grate) the apple into small pieces. Place into the dish,
      along with the sultanas.
    2. Pour the oats into a bowl and sprinkle over the spices and a good pinch of
      salt. Mix to combine and then pour into the dish. Using your hands, mix
      roughly together with the fruit.
    3. In a jug, lightly whisk the eggs with a fork. Pour in the milk and maple
      syrup and mix together before pouring over the oats and fruit.
    4. In a 3 or 4 oven Aga range cooker– bake in the middle of baking oven for 35 minutes or
      until slightly golden on top. In a 2 oven Aga range cooker – bake on a grid shelf on the
      floor of the roasting oven, with the cold shelf on the second runners for 30
      minutes. The baked oats should be lightly brown with a slight wobble in
      the middle!
    5. Serve hot or warm as it is or with a dollop of yoghurt

    Variations:

    These baked oats can be flavoured with anything that takes your fancy and you can swap the spices for vanilla or almond extract. A sprinkling of nuts on top is a great crunchy addition too. Instead of the apple, cinnamon and sultanas, you could try any of the following:

    • mashed bananas and blueberries
    • pear and raspberry
    • raspberry and dark chocolate chips
    • mixed berries
    • cherries and almonds

    Antonia's Tips:

    • If you have a household of people who have breakfast at different times, transfer the baked oats to the simmering oven to keep warm. 
    • To re-heat the baked oats, cover with foil and place on the bottom runners in the roasting oven for approximately 15 minutes.
    • If wished, you can decorate the top with some thinly sliced apple. Once the oats are ready, brush the apple with a little of the maple syrup and ‘grill’ for a few minutes at the top of the roasting oven to glaze.
    • I have chosen to use cup measurements for simplicity – who wants to be weighing ingredients first thing in the morning? If you don’t have a set of measuring cups, just any small cup or tumbler, ensuring you use the same one for the oats and milk as it is the ratio that is important rather than the precise measurement.
