Corn on the cob

If you are fortunate enough to have fresh corn, still in its husk, there is no need to remove the husk. Simply trim the hairy end and cook in the husk on a grid shelf on the floor of the roasting oven. If you corn is less fresh, experiment with a flavoured butter such as the one suggested here.

Ingredients:

  • 4 sweetcorn cobs
  • 75g butter or vegan spread, softened
  • 2 tbsp. freshly chopped coriander
  • ½ red chilli, finely diced
  • fine zest of half a lime
  • salt and pepper

    Method:

    1. First make the butter – in a bowl beat together the softened butter with the coriander, chilli and lime zest. Season to taste with salt and pepper. If you prefer your corn without additional flavours, simply rub in a little butter and season with salt and pepper.

    2. Rub/spread the flavoured butter all over the cobs of corn and wrap each one tightly in a square of foil. Place the parcels on a traditional grid shelf on the floor of the roasting oven for 30 minutes. Unwrap carefully and enjoy!

    Tip:

    • You can flavour the butter/vegan spread as you wish – a selection of herbs, a little blue cheese, chipotle chilli paste are all good accompaniments. Plain butter with plenty of salt and pepper is perfect too!
