Sausage and Chestnut Stuffing

Description:

Savoury, but with a hint of sweetness, this stuffing is the perfect accompaniment for pork, beef or whichever bird you might wish to roast. It’s also wonderful on it’s own. The question is, will the stuffing survive the trip from the kitchen to the table without being mysteriously nibbled?

You'll need...

Ingredients:

  • 450g/1 lb sausage meat
  • 200g/7 oz. prepared chestnuts
  • 1 onion
  • Salt and pepper
  • 1tbsp chopped parsley
  • 1 tbsp chopped fresh tarragon or marjoram
  • Method:

    1. Peel and chop the onion.  Heat the oil and add the chopped onion.  Cook for a minute until sizzling, then cover and transfer to the simmering oven for 15 minutes until softened.

    2. Tip the sausage meat, chestnuts, onions, seasoning and herbs into a processor and whizz until mixed.  Either stuff into the neck cavity of the turkey, turn out into a greased ovenproof dish or roll into balls, and bake for 20 minutes in the centre of the roasting oven. 

    Aga Range Cooker Tips:

    • Cook in the roasting oven for 20 minutes.
    • Prepare in advance, just cook your sausage up and put to one side for up to 24 hours and bake before you serve your meal.
    • You can freeze your stuffing and bake at a later date.
